The Season of Baking/ Date Nut Logs

A few years back some friends of my son's nicknamed me Momma D.  Okay, so I'm the boy's mom and my last name starts with a D.  No stretch.  However, I do seem to have become everyone's mom.  Not surprising when you think of it as my home was always open to my kid's friends.  Anyway,  Momma tends to spoil her kids.  The CSL plasma crew in my town (where my son works) get spoiled with cookies and crumb cakes.  Yeah, I like to bake.  Could have some bearing on my youngest going to baking and pastry school.  Perhaps...

Anyway, tonight I made our family's traditional Date Nut Logs.  We have been making them since I was little and I'm six years past the half century mark.  These little gems are heavenly pieces of ooey gooey goodness and if you happen to own a food processor, they're a breeze to make!  There are 5 ingredients. 

2 Cups walnuts
1 Cup dates
1 Cup brown sugar packed
2 eggs
2 Cups coconut

Grind together the walnuts and dates, add sugar, eggs, and 1 and 1/2 C of the coconut and mix well.  Form balls.  (I use my one teaspoon cookie scoop which speeds the process along.)  Roll in remaining coconut (you will likely need more) and place on cookie sheets (parchment paper helps tremendously) to bake at 350 degrees for 10-12 minutes.  Coconut should be browned and the rounds should not be shiny.  Allow to set and then remove to a cooking rack.  Store in an airtight container between layers of waxed paper and they will keep for an extended period of time.
